Recipes: Bourbon Chicken with Vegetable Fried Rice

I didn’t do a lot of cooking back in Brooklyn. Partly because I lived at home and didn’t need to, but mostly because in New York City, I could grab a meal from any culture around the world within a ten block radius. Now that I have my own kitchen (that I pay handsomely for on the first every month), I’m starting to enjoy making my own meals.

I’m always looking for new recipes to try. On a recent trip to the grocery store, I came across Sun-Bird, an Asian seasonings brand. There were packages with delectable pictures of some of my favorite Asian dishes on the front. I grabbed the nearest package and checked the back for the recipe. Three steps? Ingredients already in my cupboard? I placed two packages in my shopping cart. I’ve never been more excited to cook!

I love bourbon chicken and fried rice separately, but together, they are my food fantasy come true.

Honestly, it tasted even better than it looked. Bean didn’t eat any (he’s in a pasta phase), but Avon and I cleaned our plates.

I loved how easy it was to follow the recipe and that I didn’t have to buy any ingredients I don’t regularly use. I’ll absolutely be picking up more of these!

Bourbon Chicken

Ingredients:

1 package Sun-Bird Bourbon Chicken seasoning

1 ½ boneless, skinless chicken, cut in chunks

1 ½ tbsp soy sauce, regular or reduced sodium

3 ½ tbsp sugar, white or brown

1 cup water

1 tbsp oil

Instructions:

Combine seasoning, sugar, soy sauce and water. Set aside.

Heat oil in skillet or wok over medium high heat until hot. Add chicken and sautee until golden brown.

Stir in seasoning mixture and bring to a boil. Reduce heat and simmer for two minutes or until desired consistency.

Traditional Fried Rice

Ingredients:

1 package Sun-Bird Fried Rice

2 tbsp vegetable oil

3 green onions, sliced

3 cups cooked rice, any style

2 tsp soy sauce

2 eggs, beaten

1 cup frozen peas and carrots, thawed

Instructions:

Heat oil in large skillet; add rice and green onions. Stir-fry until heated through. Add Sun-Bird Fried Rice Seasoning Mix and soy sauce; stir-fry one minute

Push rice mixture to side of skillet; add eggs to the center of the skillet and scramble. Stir egg into rice mixture. Stir in peas and carrots; stir-fry until heated through.
